Suggestions for apples?
 

My DH brought home a 6lb can of apples in cinnamon..I know I could make a gazillion apple pies..but was hoping for some other suggestions...Maybe I could give some as gifts to teachers?

Do you can? You can make apple pie filling in a jar, water bath process and give as a gift. then they can just put it in a crust and bake. Or http://www.ourbestbites.com/2009/09/...-pie-in-a-jar/ . You could also use them to make empanadas to give or turnovers to give- of course that means you'll be busy baking the day before you give them. You could also make fruit leather with them to give. Other than that they are very good on top of pancakes and waffles for your own use. Oh and stuffed french toast- you can either use just the apples in between 2 slices of french bread or cream cheese and the apples.

Oh those are some great ideas! I would most likely do the empanadas and the French toast.. I don't can..although I have thought about it..maybe next year!

Apple dumplings, Gingerbread/Apple upside down cake, muffins with streusel topping

Gingerbread apple upsidown cake...that would be great too..
Maybe mini ones wrapped in paper and a pretty bow?

I've seen heavy paper cups things- like cupcake liners but meant to be used without a pan for support at Walmart. they had squares and mini loaf like these http://www.thepeppermillinc.com/Brow...gle%20shopping . I saw them in packs of like 4 at Walmart. Baked in one of those and then put into a cellophane baggie- Walmart has those too. They were like $2 for 20. They also have Chinese take style Christmas boxes for $1 or so that are really cute.
