MSG-free Cream of Mushroom soup?
 
I'm so excited for Thanksgiving, and can't wait to make my famous green bean casserole, but every cream of mushroom soup I can find has MSG in it, and now that DS is here, I'm much more conscious of what I use in my cooking. I'd love to make a casserole that is better for him to eat, since I really don't want him to miss out on this tradition, but I'd rather him not have MSG either. Thanks!

I just recently started making my own and it is pretty good in casseroles but be aware if is nowhere near as salty as the canned variety.

Cream of Mushroom Uncanned Condensed Soup

3 Tablespoons of Butter
3 Tablespoons of Flour
1 Tablespoon minced onion
1/4 cup of chopped mushrooms
1/4 teaspoon of salt
dash of pepper
1/2 cup chicken broth
3/4 cup milk

Melt butter in saucepan and saute mushrooms and onions.
Stir in flour and seasonings.
Cook over medium heat until bubbly, stirring frequently.
Add milk/chicken broth slowly, stirring with wire whisk to prevent lumps.
Cook until thick.

Yield: 1 cup

i'd look in the organic section of your grocery, they almost always have an alternative in basic soups there.

I buy a portebello mushroom soup, its not very pretty when mixed in :rofl: (its rather grey looking) but its pretty much the same price as 2-4 cans of the campbells.

campbells makes me so mad over their soups, we pretty much only eat homemade soups here anymore because of the MSG and high fructose corn syrup they use :yuck: so disgusting!!

Here's my recipe. To make it "condensed" just use less of whatever "milk" you use. :) fwiw, it's plenty salty. I don't like bland food!

Creamy Portobello Mushroom Soup

8-9 cups (soymilk, nutmilk, ricemilk, etc)
3 cups baby portobellos, diced
1 cup whole wheat flour (soft or hard white work best) OR Barley flour
1/2 cup walnut or olive oil + 1 TB
2-3 tsp onion powder
2-3 tsp garlic powder
2 TB celtic sea salt (more or less to taste)
1/4 C nutritional yeast flakes

In small frying pan, sautee mushrooms in 1 TB oil, 1 tsp of salt. Set aside once tender.

In stock pot heat oil, add flour and sautee 1 minute using whisk. Slowly add milk stirring constantly. When half of milk is in, add spices and salt. Add remainder of milk. Combine mushrooms and simmer until desired texture, add nutritional yeast flakes and whisk well. salt as needed. Simmering stage can be done in crock pot for 1-2 hours on low until desired texture.

Most if not all nonorganic soups seem to contain MSG.

Have you tried the organic soups?

Pacific foods makes a condensed, aseptically packaged box of cream of mushroom soup. They also make cream of chicken and cream of celery condensed soups.

Meant to say that they are MSG-free, among other things.

well if you make it, like i said less then 5 mins time, i did the first recipe Cream of Mushroom Uncanned Condensed Soup
