Portobella mushroom caps (as many as you need for your family) washed and prepared.
Rub small amount of olive oil over mushroom caps
Season with garlic, oregano, onion, parsley and black pepper to taste
meanwhile cover a small baking dish with a thin layer of sauce
place mushroom caps in sauce
Add 1/4 cup cottage cheese (or ricotta cheese) into middle of mushroom (great without cheese too if you don't eat it)
top with prepared pasta sauce of your choice.
sprinkle with parmesean and a touch more garlic
bake at 350 until bubbly, about 20-25 minutes in my oven.
These mushroom caps also make a great burger replacement. Just grill as you would a normal burger and place in lettuce wrap or on bun, top with your favorites and enjoy
