I cooked this pasta with leeks and peas and it was a big hit. This is what I did.
4 leeks cut up thinly in half moons
pack of frozen peas
some chopped fresh tarragon
bag of pasta
3/4 cup heavy cream
2-3 tbsp olive oil
Cook the pasta as directed. Throw in the frozen peas in the last two minutes. Meanwhile saute the leeks in the olive oil until soft. Probably 6-8 minutes. Add the cream and simmer for a minute or two until it is thickened. Add the pasta and peas and mix together. Fold in the tarragon. Delicous!
