CHICKEN DIVAN
1 pound broccoli florets
2 cups chicken broth (can use chicken bouillon)
2 tbsp cornstarch
¼ cup cold water
½ cup nonfat plain yogurt
1 tbsp low-sodium soy sauce
½ tsp dried oregano
½ tsp salt
¼ tsp black pepper
½ tsp dried basil
2 cups brown rice, cooked
1 ½ cups chicken, cooked and cubed
½ cup grated parmesan
Preheat oven to broil.
Steam broccoli until crisp-tender (frozen broccoli can usually be microwaved).
Heat chicken broth. Mix cornstarch and water together and add to broth, stirring until broth is thickened and somewhat clear. Remove from heat and fold in yogurt. Stir in soy sauce, oregano, salt, pepper, and basil.
Place brown rice in the bottom of a casserole dish and top with brocccoli. Pour half of the sauce over the top. Layer the chicken on top. Add ¼ cup of the parmesan to the remaining sauce and pour over chicken. Sprinkle remaining cheese on top and place under broiler until lightly browned. Serve immediately (4 servings).
