I needed some quick sandwich bread. Didn't have 2 hours to let our normal recipe rise. then I found this

It is simple like no knead artisan bread and only needs 30 mins to rise. We loved it. The crust was slightly crunchy and the texture was nice and fluffy. And the best part- it has to be the simplest bread I have ever made. Next time I am going to sub more whole wheat flour for the AP to see how far I can go without messing the texture up too bad. Its a great recipe.
