Well, I never cook anything with my roast, so I serve with it whatever we feel like having that night. Sometimes I roast carrots and potatoes (and sometimes sweet potatoes) together. Sometimes we have macaroni and cheese. Sometimes green beans, sometimes corn, sometimes green peas. I like black-eyed peas with mine. We never do rice, but that's because my family will only eat the rice I buy (a whole grain blend) if I cook it in chicken broth, which is just weird with a beef roast.
