I've just done beans a little, but I've done 2 ways so far: just soaked (so I just take them out and boil them/throw them in broth to start a soup) and fully cooked by soaking and then boiling. They seemed ok both times, but I am not sure if they're as pretty/good consistency as store bought - I'd love to hear others' experiences.
