Re: how to freeze..
I've just begun spreading the slow-cooked, cooled beans onto 2-3 foil-lined, greased cookie sheets and freezing them, then putting the loose beans all in one gallon-size freezer bag. It's easy to scoop out a cup or two for a recipe and I'm not chasing six pint-size freezer bags around my freezer. I've also not yet ruined a recipe by using 2 cups of beans in place of a 1 2/3-cup can.
