I meal plan on the weekends to make my life easier through the week.
Roast chicken with veggies and potatoes
Chicken enchiladas (using leftover chicken) and Mexican rice
Spaghetti or some other kind of pasta dish
Sandwiches
I usually only cook every other night because it's just DH, me, and DD (19 mos). Most of the recipes I make are enough to feed us for 2 nights.
