At least once a week, I cook a double batch of something so I can add the leftovers to my freezer stash. That gives me one or two nights a week that I can just grab a freezer meal for dinner. So typical week might look something like this:
Some kind of soup - extra big batch (either freeze half or use extras for lunches).
A couple of quick dinners like Korean beef or stir fry.
Something vegetarian like roasted vegetables over quinoa.
One big production type meal which is usually a cheat meal - this week's was fried chicken, mashed potatoes, gravy, corn, cornbread, etc.
Then I fill in anything else with meals from the freezer.
