Homemade Mac and cheese
Pumpkin bread
Salad with dried cherries and honey-roasted sunflower seeds
Mac and cheeses recipe, in case anyone's interested:
Microwave 2 tbsp butter 30 sec
Stir in 2 tbsp flour (I use whole wheat); microwave 30 sec
Drizzle in 1 cup milk (I use coconut/almond/soy, due to lactose issues here)
Microwave 1 minute at a time, stirring in between each minute, until thick
Stir in 8-12 oz cheddar cheese (we use a naturally lactose free variety)
Microwave 35 seconds
Stir in cooked pasta
Spread in baking dish; crumble crackers over top; bake at 350 for 35 minutes or until bubbly.
