Thanks. This helps. I don't know enough about baking to start replacing ingredients without fear of screwing it up and couldn't find a recipe that tells me how much mint to use.

I would definitely not put liqueur in a kids cake. I do cakes for a job and I would say find a chocolate cake recipe you like and replace the vanilla with mint extract. Then make some chocolate mint buttercream again replacing the vanilla with mint extract. That should make it nice and minty yet still chocolatey.
