Almost anything you'd make with meat but with out the meat. Avocado fajitas, bean and/or avocado enchiladas, sweet and sour veggies (carrots, onions, pineapple, green beans, red pepper, orange pepper, whatever) over rice, veggie pot pie (just regular pot pie recipe minus the chicken or turkey), veggie and dumplings, spaghetti (I have never put meat in spaghetti or lasagna), veggie chili, veggie fried rice, rice pilaf with lots of veggies, veggie stir fry over rice, beans and rice- http://allrecipes.com/recipe/black-beans-and-rice/ just cook a bag of dry beans super cheap , grilled port mushroom sandwiches with sweet potato and carrot fries (just cut like fries, toss in olive oil and bake), soups- we like soup, I make a lot of soups for lunches during the week so we don't usually eat them at dinner, but we use to before we started using them so much for lunch. I always hated cabbage growing up, but I have discovered lately that i do like it as long as its not just straight boiled cabbage.
Everything in the fridge veggie soup- veggie or chicken broth and every veggie you have in the fridge or freezer you want to out into it. Frozen okra, cabbage, carrots, green beans, peas, thinly sliced spinach, tomatoes, white potatoes, sweet potatoes, zucchini, white beans, kidney beans, celery, mushrooms. You can put just about anything you want in to it. you can throw in pasta, barley or rice.
Black bean soup- thin style, I don't like think. 2 cans or a whole bag dry beans cooked. chicken broth, 1 can green chilies, 1 or 2 cans of tomatoes. Saute onion and garlic in small amount of all then add rest of ingredients and let simmer a few mins.

http://cookingwithcarrie.blogspot.co...achi-soup.html We love this, but the numbers are off. Instead of the tbsp of bouillion granules you want 4 teaspoon each of beef and chicken. Or you could probably use broth. We leave the veggies in instead of discarding and skip the fried onions.
If you don't already know you can cook dry beans in the crock pot.
