Here's the bar recipe from a friend of mine. I bake for about 20-25 minutes.
when i get a chance i'll write about this in more depth and detail on my blog but until then: this is my formula for making granola bars.
2 cups of grains--oats, wheat flour, wheat germ, etc.
2-3 cups of "stuff"--dried fruit, nuts, chocolate chips, etc.
1/3-1/2 cup nut butter--smooth or chunky peanut butter, almond butter, etc.
6 tablespoons of fat--oil, melted butter, maybe shortening?
1/2 cup binder--syrup, corn syrup, honey, etc.
pinch of salt
sweetener to taste
spices or flavorings to taste--such as cinnamon, vanilla, etc.--this is optional
today, this is what i did:
1 1/2 cups oatmeal
1/2 cup oatmeal flour which i made in the food processor
about 2 1/2 cups of trail mix
1/2 cup peanut butter
1/2 cup honey
pinch of salt
1/2 cup brown sugar
i skipped the fat since i used peanut butter and i didn't miss it, in fact i might not include it in future batches.
i put all this in the stand mixer and combined while i greased a pan. then i spread it on the pan in a more or less uniform layer about 1/2" thick and baked at 350F until the edges were brown.
when it comes out of the oven it will still be soft--give it time to cool and it will stiffen up. cut into bars and wrap for storage.
