That sounds good! I think I could eat black beans & rice every day.

1 T. oil
1 (red) onion
3 cloves garlic
1 15oz can black beans, undrained
1 14.5oz can diced tomatoes, undrained
1t. dried oregano
2 cups cooked brown rice
mozzarella cheese (optional)
In large saucepan, heat oil over med. high. Add onion, cook and stir until tender. Add garlic, beans, tomatoes and oregano. Bring to a boil; stir in rice. Cover; reduce heat and simmer 5 min. Serve with cheese.
