I'm making pumpkin cheesecake pie for our Thanksgiving which is Wednesday. How soon can I make it? I made 1 tonight to try the recipe. Would it still be ok for Thanksgiving? I only have a few hours after work to get dinner all ready so I'd like to make what I can early.

Cheesecake can totally be made a few days early. If you want, you could freeze it, but it will hold fine in the fridge.
