I want to make a freezer meal for a friend who is about due... I was thinking I'd make fettuccini with veggies and my homemade Parmesan cream sauce.
The sauce is butter, garlic, half and half, and Parmesan cheese. I would add broccoli, carrots, and cauliflower slightly undercooked so when it's reheated it won't get soggy.

I do not have great luck freezing pasta meals because they do tend to go a bit soggy. But, I have never looked for tips to fix this. So, I don't know. No help

I have had issues with separating when try to freeze anything with dairy and separating and curdling when I try to freeze high fat dairy such as whole milk, half and half, or heavy cream.
The pasta I would likely cook 'til just done. I haven't had issues with that.

I think the sauce would break - separate or curdle. There may be ways around it though if you google. I feel like i might've seen America's test kitchen talk about it once...?
