Smile Good crock pot potato soup recipe?

Maybe with ham in it?

I have a good recipe but it overflows every time!

I'm calling today Souper Sunday! Gonna fill 3 crock pots and make a big batch on the stove! Sausage and white bean (with endive!), Chicken and Sausage Gumbo, Chicken Santa Fe, & Beef Barley! I also have a recipe for minestrone that I may make tomorrow. This will be divided into serving sizes and frozen for lunches

The best part is that I'm doing the weeks worth of laundry all day today- probably 6 HUGE loads so I sent dh to get all the groceries necessary!

No recipe to offer, I have a house full and nobody likes potato soup. It could be that I just haven't made one they like! Every Sunday is soup Sunday at our house . The sausage and white bean with endive sound wonderful!

It is probably my fave soup- I got the recipe from my bestie!


Sausage and white bean soup
1 small onion finely chopped
3 carrots, coarsely chopped
2 celery ribs, coarsely chopped
2 garlic cloves, smashed
2 bay leaves
2 tbsp olive oil
I lb smoked sausage, sliced thin
2 15oz cans navy or cannelloni beans, drained and rinsed
2 15oz cans petite-diced tomatoes
8 cups chicken stock*
3 large russet potatoes, thinly sliced into quarters
1 head of endive, rinsed and chopped
Parmegianno cheese and a crusty loaf of bread

Heat the oil in a large stockpot. Sauté the onion, carrots, celery and garlic until tender, about 8 minutes. Add the sausage and cook off the fat, about 10 minutes. Add the beans, tomatoes, and bay leaves. Add the chicken stock and bring to a boil. Add the potatoes and simmer on medium for 20-30 minutes. Salt and pepper to taste. Stir in the endive the last 10 minutes of the simmer. Serve with grated parmegianno and buttered, crusty bread.

Ouch!!! I did this 2 years ago, exact same way. I feel your pain!

I threw away my regular can opener, and bought this OXO smooth edge can opener instead. No more sharp edges now!!
