I think the best thing for people just heading away from meat are the flexible cookbooks. I'm a big fan of "The Flexatarian Table" every dish has a veggie and omni version. See if your library has some good veggie cookbooks. Once you get a little inspiration you'll be amazed at what you can come up with!

lentils are a bean!
Okay so I have a Dh that was ANTI anything that didn't include a giant thick amount of red meat at every dinner and most lunches. After watching food inc. he literally did a 180 in the last yr. Now we are down to eating ANY meat about 2-3 times a week, this week we have had NONE!! What meat we do eat is free range chicken, eggs, fish. red meat is obsolete now for us.. Alot of mine have already been said but I will still post Veggie quiche- great with those veggies that are about to die on you! Veggie lasagna Black bean lasagna Veggie spaghetti- I take garden veggies ie. squash, tomatos,garlic, onions, ect. saute and add can of kidney beans and jar of veggies ragu (organic) over spinach spaghetti or ww spaghetti!! YUMMYYY!! We eat ALOT of Chipolte style dinners! My Dh LOVES our fresh garden tomatos! Stir fry of course! Veggie burgers salads with feta and kidney beans black beans and rice Yesterday for lunch the kids and I had kidney beans plain, w/ homemade WW bread and butter warmed!! YUMMY! ramen noodles drained with veggies and beans mixed together! A family fave here! Chili garbonzo bean salads Refried beans and cheese tortillas We eat alot of hummus and veggies along w/ almonds, pistachios and peanut butter The list can go on for ever, but I haven't done great with venturing outside these meal plans!

our favorite in this house is falafel in a pita shell. My DH used to make fun of it and say fa- awful....that is till he tried them!!

Lasagna with spinach and mushrooms is a fave around here. And I love veggie fajitas- black beans, rice, mushrooms, onions, and bell peppers with pico or salsa, cheese, and sour cream.

We used to do brown rice & lentils (with spinach or kale) at least 1-2 times/week (both WIC foods 7 we were....broke.)
