We've got some busy days up ahead and I'm trying to plan so we don't wind up eating out. It seems like I make and freeze the same few things every time, so I need some variety. What do you make ahead and stash in the freezer for a "rainy" day?? Please share your recipes with me!

Lasgna,Spaghetti sauce,Enchaladas,soups The crockpot helps alot to for those days when you don't have time to be in the kitchen we have been using it alot latley as school just started and we are crazy busy!

I just took the book Dream Dinners out from the library. You might want to check it out, very cool!
Over 100 recipes taht are prepare and freeze, they do the recipe so you can prepare 1 meal or 3 so you eat 1 and freeze 2 or freeze all 3 or just the 1. Very neat book!

Not 100% make-ahead but I frequently roast and shred a whole chicken in the crock pot and freeze the meat for chicken salad, burritos and such. I have a cookbook somewhere that is full of meals made for the freezer and meals made from things that have been previously frozen with the cost per serving. I'll try to find it in the morning and post a few.

Stroganoff (Mushroom or Beef)

I don't specifically make a lot of things ahead, but I immediately freeze our dinner leftovers. If there is a great quantity of something I put it in gallon ziploc bag (chili, other soups, spaghetti). If it's only 1 or 2 servings, I dish them up as individual servings and then for a weekend lunch or quick weeknight meal, I'll let everyone choose which meal they want (grilled chicken, scalloped potatoes or meatloaf and peas, etc.).
