Sauerkraut Making ??'s
Any Mamas who make their own sauerkraut...what do you use for containers to ferment it in? Is it ok to ferment it in icecream pails? or should I use a crock? And do you process it afterwards for storage or just keep it in the fridge?

I myself have never made it but my grandmother used to often. I would use a crock. The brine is highly acidic and I don't think would fare well in plastic. You ferment it at room temp. keep a clean towl over the opening of the crock and change it often. You can either can it after it is ready or keep some in the fridge, it will keep much longer if you can it.
