Taco chicken.
Some chicken breasts, taco seasoning and a jar of salsa. Can of cream of mushroom or cream I chicken optional. Let everything go about 6-7 hours. Serve over rice, tortilla chips, whatever. Chicken shreds so easily and it's delicious! |

I currently have this going in my crock pot. I hope it tastes as good as it smells!
Italian Chicken This was a great all in one dish! Everyone loved it and the flavor was fantastic. By using the fat free salad dressing it was a yummy low fat dish. A keeper for sure! 4 Boneless Skinless Chicken Breasts 16 Ounce Bottle of Italian Dressing (I used non fat) 1/2 Cup of Parmesan Cheese Italian Seasoning 4-6 Potatoes scrubbed cut in half or wedges (you can peel if desired) 1/2 bag of mini carrots Spray crock with Pam Squirt a small amount of Italian dressing at bottom of crock-pot. Place two chicken breasts in crock. Pour some of the Italian dressing on the chicken. Sprinkle half of cheese onto the chicken. Sprinkle Italian seasoning onto the chicken. Place next two chicken breasts into crock-pot, if possible not directly on top of the first breasts. Sprinkle remaining cheese on top of chicken. Pour carrots on top Pour more of the Italian dressing on top of chicken and carrots. Sprinkle Italian seasoning onto the chicken and carrots. Place potatoes on top. Pour the remaining Italian dressing on the potatoes.Sprinkle Italian seasoning on the potatoes.Cook on low for 6-8 hours.

My Favorite:
6- med-Thin cut Pork chops 1 Can Cream of Chicken Soup 1 packet Ranch Seasoning Cook on low for 6 hours, High for 4. Serve with Roasted Garlic Mashed Potatoes. So yummy! |

Made this up last night- Pretty good!
Coconut chicken legs 2lbs- bone-in chicken leg pieces (I didn't skin, but I will next time!)-place in crock pot 3 med sweet potatoes- skinned cut in chunks- place over the chicken Cover with this sauce: 1 15oz can coconut milk 1 lime's juice 1/4 cup honey 3 garlic cloves minced 2TB ginger minced 1 bunch scallions, chopped cayenne pepper optional salt to taste 4-5hrs on high-until chicken is done and potatoes are very soft Serve over rice

Made this last night.
4 or 5 frozen chicken breasts 1 jar salsa about 15oz 1 can corn 15 oz drained 1 can black beans 15 oz drained Cream cheese 8 oz Put breasts in bottom of cooker and add salsa, corn and beans over them. Cook on high 4-5 hours until chicken is done. Stop cooker. Put cream cheese on top and let melt 1/2 hour. Serve. Yum! Sorry; this one was already posted. Oh well.

Chicken Tortilla Soup
1 package chicken breasts (you could use any part I suppose!) 2 15 oz cans stewed tomatoes or diced with celery, onions and peppers 1 jar salsa (I use Newman's Own and the jar is smaller than some so use your discretion) 2 cloves garlic minced 2 Tbls. butter a handful of cilantro chopped a can of chicken broth Place all ingredients in crockpot and cook on low for 6-8 hours. Serve with shredded cheese, sour cream and chips. (we use corn chips but you could use tortilla or whatever you'd like!!) |
