For dd I would always cook her veggies in broth, she seemed to eat them that way. Carrots, broccoli, steamed cauliflower with broth, etc.
Another trick I use is salt, I add salt to cucumbers, tomatoes, beans, edamame and voila they are gobbled up. |

DS is also in a super picky veggie phase. Sometimes for lunch or snack I will make him a peanut butter sandwich with crated carrots mixed in.
I also do the grated veggies in pasta sauce trick.... Sauteed spinach mixed in works great too. works everytime I have really grate luck with making him a smoothie with banana and veggies. the banana flavor is so strong, that it covers up the veggie taste. I sometimes add a little apple sauce for extra sweet to really hide it. DS just drank a banana/applesauce/broccoli smoothie and had no clue lol! HAve you seen those fruit/veggie pouches? You can find them with 2 or more veggies inside mixed with a fruit and DS adores them and consideres them a special treat. great for on the go and a quick shot of veggies.

My boys love pancakes so I will often make veggie pancakes either as our meal or a side.
2 cups veggies---sauted. Corn/pepper/onions is a favorite. Broccoli/cauliflwoer/carrots 2 cups flour 2 cups milk (or buttermilk) 2 eggs. Mix all together and cook like pancakes. I don't add extra oil since Idump the sauteed veggies right into the batter. But if I was using leftover already cooked veggies then I would add 2 Tbsp oil. If for a meal I add bacon or ham to the batter also.

Last night I made mini stuffed mushrooms. DD loves mushrooms, or "muffrooms" as she says it. I took the standard grocery store button mushrooms and removed the stems. Then I took some Trader Joe's frozen creamy polenta mix and heated it up. Then I scooped the prepped polenta onto the mushrooms and baked for 15-20 minutes. DD couldn't get enough!
I'm sure you could stuff mushrooms with anything savory such as chicken and cheese.

Everyone her loves squash baked in the oven. DD2 would not for the longest time even try corn until we told her that winnie the pooh bear loves his "honey corn" now she eats it like crazy. We also told her broccoli was little trees she could chop with her teeth. DD2 really does not like to try new things so often we have to make up stories to get her to even try it. She however has always liked potatoes..
