dairy free coconut cream pie
I needed a recipe for coconut cream pie that did not use dairy.
After searching allrecipes and coming up empty I decided to modify a key lime pie recipe. I used the Easy Key Lime Pie 2(in roman numerals) recipe. The recipe called for 1 9" premade crust(we used grahm cracker crust as my son can tolerate the butter but not the milk) 3 eggs separated 1 14oz can of sweetened condensed milk(I used a 13 oz can of unsweetened coconut milk + 1/2 cup of sugar 1tsp grated lime zest(I used 1/2 cup of sweetened shredded coconut) 1/3 cup of lime(I skipped this) whipped topping to top the pie(we reserved this for those able to eat dairy) Preheat oven to 350 degrees. Separate the eggs and whip the whites to stiff peaks set aside Beat the yolks and add remaining ingredients. Add to stiffly beaten egg whites and fold in. Pour into a premade crust. We used a grahm cracker crust as my son cannot tolerate cows milk but doesn't have an issue with butter. For those who cannot have any dairy use whatever crust you prefer. The recipe actually says to bake at 250 degrees for 10 minutes. At 350 degrees it took us an hour to finnish baking. Cool completely, serve, and enjoy. It was the best coconut cream pie I have ever eaten.
