what's your favorite vegetarian recipes?

SO wants to be on a vegetarian diet and I need help... I'm a good cook but I need more ideas. Honestly I could cook vegetables much more often than I do. I hate them.

-Portobello mushroom burgers
-Eggplant parmesan
-Black bean enchiladas
-Red beans and rice
-Cheese and zucchini lasagna (zucchini cut into ribbons with peeler to use instead of noodles)
-Fish tacos
-Broiled fish and steamed veggies
-Falafel and pita with roasted eggplant and hummus
-Mediterranean flatbread (pizza dough with sliced red onion, avocado, heirloom tomato and grated feta cheese)
-Homemade mac and cheese with sundried tomatoes, pine nuts, and onion
-loaded vegetable calzones (use tomato paste instead of sauce and it's not soggy)

Stir-fried bean sprouts. This recipe is simple. Basically, you just need to saute garlic and onions. Add sliced green beans, carrot strips, red bell pepper strips, cabbage strips and bean sprouts. Sprinkle ground black pepper and liquid seasoning. Stir-fry for 3 minutes until done.

Black bean/roasted sweet potato/avacado/salsa tacos or burritos
Homemade soup- I love making stock w/ all my veggie scraps (store them in freezer) and then use up whatever veggies are on their last leg + beans or pasta or rice or barley.....
Breakfast for dinner- hash browns, local eggs, fruit, muffins or pancakes
Brown rice, beans( any kind) sautéed greens
Brown rice and mushroom fried rice
Taco salad
Pasta and salad
Panini sandwiches- avacado, hummus, peppers, onion, greens.......

We eat gluten free and (mostly) vegetarian. We do eat eggs and fish, and will occasionally have poultry.

black bean and sweet potato or spinach enchiladas or burritos
sweet potato and kale hash with or without a fried egg and avocado
veggie chili
curried lentils
sweet ginger mushroom and chickpea lettuce wraps

I make a simpler version by just doing the carrots, celery, tofu, and noodles. You can add any veggies like she says. SO good.

My Mood:
Good thing about vegetarian is you can make almost anything and just take out the meat or make it on the side for the meat eaters. DH eats meat and I don't.
I love to make black bean burgers and DH loves them too.
I make pasta bakes a lot as well just no meat. Last night I made shells with cheese asparagus and tomato sauce and it was great.

I make a monthly meal plan and some of our favorites are...
Bean burritos
Taco salad (typically made with black or pinto beans)
Lentil loaf (it's meatloaf using lentils instead of ground beef. The recipe I like best is called 'really good vegetarian meatloaf.')
Veggie vegetarian chili
French lentil soup
Tortilla soup
Vegetable pot pie with tvp
Baked potatoes
Bbq tofu (we bake it and put Bbq sauce on it)
Veggie stir fry with tofu
Pizza
Macaroni and cheese
