Chicken/pepper/onion wraps with a garlic/yogurt sauce and potato wedges
Also made apple crisp, so that plus vanilla frozen yogurt for dessert, all gluten free.

I started a roast in the crockpot since we were planning to be gone all day. We ended up getting home early and now I'm not in pot roast mood, so I'm going to tweak it in some way. I'm thinking about shredding it for tacos or maybe making shredded beef French dips. I still have 2.5 hours to figure it out!

The girls have swim team practice tonight from 5:30-7pm and it is the 1 night practice is at the nearby university and we have to leave at 4:45 so we go out on Mon. Tonight is Qdoba.

Today is DS's birthday so we are having one of his favorite things which is "spicy" Mac and cheese. It's just radiatore pasta noodles with jalepeno velvet a cheese. Totally unhealthy but seriously delicious!

Sure.
2lbs stewing pork 1 pack fajita spice 1 small red onion 2 cloves garlic 1 tin tomatoes 1 tin red kidney beans Splash of white wine vinegar Soften chopped onion and garlic in pot. Add pork and brown. Add fajita spice. Fry off. Add vinegar and tomatoes. Switch to slow heat and cook for 2 hours. Allow to cool, shred pork. Add beans and a pinch of salt. Let it soak for a few hours. Heat and serve.

Of course! It's Mexican night almost every night at my house. Always cheap and easy
