Question healthy quiche recipes, do you have one?

I made THIS for dinner last night with the addition of about 1/2 cup chopped green onions and it was delicious! I have chickens, so I've always got eggs coming out my ears and I was thinking how easy it would be to make several variations of quiche and just freeze it for quick meals. I mean, lean protein, veggies, heat and serve what more could you ask for right? Dh said he'd eaten a spanish type version before. So do you have any "healthy" versions you like to make with lots of veggies, preferably little to no processed meats?

I usually do spinach and everyone likes it. I've done cabbage before too. You could also do spinach/cabbage pie though they use less eggs. Sometimes I like the pies better, partly for that reason. More veggies, less eggs You can throw whatever you like in them pretty much. I've thrown in beans before and I also like to throw in sliced mushrooms. We also like to use parsley and dill, and either shredded regular onions or chopped green onions. I'm sure fennel would taste good too. Never tried freezing it though - I'm curious how that goes.

ooh that sounds good, I'll have to try that too. It's the eggs I need to get rid of. My chickens are laying like it's summer!

I don't do quiche, but I do a hashbrown casserole that you might also consider. It's a layer of hasbrowns (either shredded or diced), with your eggs over top. We don't usually add much as far as veggies, as my family doesn't really like it, but we do like salsa mixed in there, so maybe that would work for a quiche. If the salsa would give too much moisture, you could just do the onions, tomatoes, peppers, and seasonings. We top it with cheese for some protein and don't usually put meat in it, though we did some ground beef this morning.

I have a crustless quiche recipe that has sausage and apples in it. So good! I may have to make that soon! I'll post it here

You could also try baking with coconut flour. It tends to use a lot of eggs although it's been a lot of trail and error to find recipes that we like. I tried a plantain brownie recipe recently, though that even my husband liked thanks to Sakari! LO's and I also like coconut flour pancakes (they use a lot of eggs) and could be frozen. We don't find them like "real" pancakes though - my husband likes them sometimes but not usually that much. They're very filling too. I've also made a coconut flour bread that uses 6 eggs...again, LO's and I liked, but it's not quite like "real" bread. It could also be frozen.
