I just made this and it is YUMMY! I didnt have any lemon juice so I added some red wine vinegar for the acid. I think it would be even better with lemon juice. We also didnt have any pita's or pita chips, so we made homemade flour tortilla chips in the oven. Super yummy!

I recently stumbled onto a recipe for hummus that uses almond pulp (the leftover from making almond milk) instead of the chickpeas. It is so tasty and great if you cannot tolerate soy/legumes.
I just use the leftover almond pulp from one batch of almond milk, a couple tablespoons of tahini, a couple cloves of garlic, a splash of lemon juice, about 1/4 cup of olive oil, salt, cumin and coriander to taste. As for tahini, I just make it. I always have toasted sesame seeds on hand. I put 1/4 of canola to 1 C sesame seeds in the food processor. It only makes enough for about two batches of hummus so there is no concern about using it before it spoils. |

my son has a cow dairy allergy. but I found some sheep milk creme freche I'll try with it. We really like hummus but we ate so much of it this summer I haven't made it in a few weeks.
always nice to put a spin on something good. hopefully it'll be even better

Thank you for reviving this. I remember when it was first posted and I wanted to make it. You could prob. do it in the blender but would need to put at least some of the oil in the bottom to get it going.
