Seriously, I make this dish every other week. It's super simple and VERY tasty!
Also, my husband requests it, as well as roasted cabbage. He like the cabbage with a drizzle of balsamic vinegar. Just thinly slice the cabbage and brush or spray with oil of choice (we use coconut), the sprinkle with salt and pepper and leave in a 350 F oven until as brown as desired. No lie, the browned parts have a flavor like browned marshmallows!

I usually just buy the falafel mix that you add water to
One of our faves is quinoa, black beans, corn, tomatoes, cilantro, red onion, and a little olive oil- SOOOO good! You can eat it like that, wrap it up in a tortilla, hot or cold, and it's super filling and cheap in the summer when you can get fresh veggies.
I love veggie stir fry, and you can always do meat separate for meat eaters.
Pizza and calzones can be made with lots of yummy veggies and omit the meat part. We make calzones with broccoli, cheese, spinach, mushrooms, and onion, and it's super yummy!

That quinoa dish reminds me of quinoa tabouli, my favorite thing to do with it! I made some a couple of weeks ago, and ate it all in two days. And we just had homemade pizza/calzones last night with fresh mozzerella - heavenly!
