Favorite bean recipes

We love all kinds of beans here in Louisiana.

Red beans and rice with cornbread.
Cook the red beans with ham jocks or sausage or left over meat. Put over rice, add cornbread on the side.

10 bean soup with or without rice.
Cook like red beans. I almost always throw leftover meat into this.

Lentil with or without rice. I use ham jocks or smoked Turkey necks in this. My favorite is the turkey necks.
Cook like the red beans.

Lima beans with bacon. I usually cook this with another meal, use as a side item, then refrigerate and have the beans the second night... this means I get a night off to not cook.

This is not the cheapest meal, but it's super good...
Use leftover chilli.
Chilli with beans, I use about 2 cups
Cream cheese
layer in bowl and heat in microwave until hot and cheese is melted. You can leave it layered or mix it up.
Serve with lettuce, tomatoes, and cheese.
We eat this from a bowl with tostitos.

Bean burgers are yummy I don't measure but here is what I do
Chopped onions shredded carrots, what ever other veggies you choose, saute I also often throw in handfuls of spinach

beans cooked (I use dry and crockpot them) black or kidney, often a mixture and add rice then smash well.
What ever seasonings you like, I use cumin garlic powder etc. Mix all together, roll into balls and then roll in bread crumbs.
Last week I had no need crumbs left but extra pancakes in freezer from a previous breakfast. 2 seconds in the vitamix and I had fine crumbs
Cook in oil (I use coconut) and rest like a hamburger if you choose, we east them straight with no condiments or buns super quick healthy and yummy

Chili

Leftover chili gets corn chips in the bowl with avocado and cheese and sour cream for another dinner

Butter been soup- dry limbs beans soaked night before. Cook in crock with seasonings you choose and tons of frozen veggies along with stick of butter. I often add 1/2lb cooked hamburger. This is a very large amount of soup so we have leftovers

Tonight I made a tomato cheese strogsnoff, recipe calls for 1 lb of hamburger, I replaced with kidney beans when layering it instead of meat
What ever pasta you choose already cooked
1 cream cheese block mixed with some sour cream maybe 8 oz
however much beans you choose with 1 can tomato sauce and 1 can diced tomatoes saluted onion mixed
Layer in order pasta then bean tomato mix then sour cream cheese mix then shredded cheese on top cook 25 min 350 I use 9x13 pan

Split peas soup

I often add beans to my hamburger to stretch it further. I even make been balls in veggie spaghetti or add them could to salads. Options are endless and we east them often, I buy them organic in 25lb bags

My x-husband REFUSED to eat beans. My kids and I LOVED beans. I would make a 10 bean soup one night, and the next night, I would make a meatloaf. I would grind 2 cups of beans into a mash and add it to the ground meat mixture.
X would tell me it was the best meatloaf i ever cooked. I never told him it had beans.

We have not found a "soft" corn tortilla that we like. They are all gross So we stick with the hard shells. How could I do a burrito ingredients into a hard shell? Just layer them and put cheese on top and bake? I've never made my own burritos.

Could you use tostadas and have a kind of "open face" burrito?

We had to go gluten free a while ago. I found that middle eastern and Indian cooking was a great alternative. Flavorful and cheap. My kids love it. There's even a crockpot curry cookbook I use all the time.
