We love to make Hellmans Mayonnaise Parmesan Crusted Chicken. It's on their website. Soooo good and super easy!

Seriously we will eat this all day until the roast is gone, save the sauce and eat that the next day over rice. So good. We also make it sometimes with banana peppers instead of peppercinis.

I have a chili recipe that is a hit around the house...I'll eat it because it's lean and has a lot of protein, and my husband and kids love it. It's also super easy to make.

Our family favorite is a couscous oven dish with chicken and veggies. Last time we made it I realized that we're going to have to start doubling it because everybody likes it so much (I like leftovers). We don't really have a recipe that we follow, but it's a little something like this:

a couple of large tomatoes or several smaller ones, diced and spread over the bottom of a casserole dish
about a half to 3/4 of a zucchini and one bell pepper (red or yellow usually), sauteed for a couple of minutes and layered over the tomatoes
250 grams couscous layered over the veggies
250 ml of cooking cream mixed with 300 ml chicken broth, pour over veggies and couscous
about 300 grams of chicken cut into strips of blocks, browned for no more than a couple of minutes in a skillet. layer the chicken on top of the couscous and veggie mix, cover and bake for 20 minutes at around 390F/200C.

When it's ready to come out of the oven, cover it with lemon zest, juice and fresh flat leaf parsley.
