Tonight was tater tot taco bake. Really good, the kids loved it! And watermelon too.

Tonight it is beef strogonof but I am using ground turkey in place of beef. Because you know, what is beef? With prices so high these days we don't get much beef.

This looks good! We've done tater tot casserole before but it never occurred to me to put a mexican twist on it! Middle DS is GF, I wonder if I can get GF tater tots around here


I think tacos were mentioned before, but we do taco salad a lot too. Just a bunch of lettuce, taco meat, cheese, crunched up corn chips, salsa, sour cream, and so on. My boys (4 and 2) even eat it up! They seem to like "leafs" (aka salad) a lot though, so it might just be them!

You would still have to heat the oven up, but if you want to make meatloaf and do it quicker so the oven isn't on as long, you can make individual sized loafs (think large hamburgers). Takes about 20 minutes to cook in our oven! A big plus when you don't start supper until 5:30

On hot nights (or days, for lunch) when we don't want to turn the air on we do "snack supper" which my kids just go nuts for! Some combination of a protein (cheese stick, lunchmeat slices, hard boiled egg), something crunchy (granola bar, corn chips, pretzels), veggie (carrot sticks, celery sticks), fruit (apple/orange slices, grapes, raisins, etc.) and whatever else I feel like throwing on there

Pulled BBQ Chix here along with some salt and pepper sweet potato wedges!

Frozen berries for our snack later, too!

Sounds pretty healthy! Woo... This is, sadly, a rare occurrence. My hubby is the pickiest eater, ever!-- no pastas, no soups, nothing with sauces or gravy, doesn't like many veggies. And I don't like cooking more than one meal! haha

Ore-Ida tater tots are gluten free!! I've made tater tot casserole before and just was not a fan of it. But this taco style one was really good!! Easy to feed a crowd with or have leftovers for lunch, etc. it was a hit with the kids too!

Crunchy chicken salad

Made it gluten free by leaving out the ramen noodles and flavor packet. Added walnuts, chopped apples, and sunflower seeds instead. Really good and the kids enjoyed it! Even better if you let it sit for a couple of hours in the frig.
