in need of a good peanut butter cookie recipe

Need to make peanut butter cookies on Sunday and I just never have. They're a request from a lovely co-worker who's retiring.

I'm known for baking (maybe just in my head ) so I don't want to let her down

favorites?

This one is from The Ultimate Cookie Book.

1/2c unsalted butter
1/2c brown sugar
1/2c granulated sugar
1/2c peanut butter(I always use at least 1c, sometimes 1 1/2)
1 egg
1c flour
1/4 tsp salt
1/4 tsp baking soda
Pinch of nutmeg

Bake in 350 degree oven 10-15 minutes. Grease your baking pan.

Cream sugars and butter. Add peanut butter and mix until smooth. Mix in egg.

Combine remaining dry ingredients. Then combine both wet and dry ingredients.

Using a scoop the size of a melon baller makes 30 cookies. Flatten with a fork. I dip my fork in sugar instead of flour or I roll the balls in sugar before flattening.

Last time I made these I doubled the recipe(used 2 cups peanut butter) making 60 cookies. They were gone in 3 days. My sister and her kids were over eating them as well. They even took some home with them.

I forgot the size of the scoop looks small but the cookies bake up into reasonable sized cookies. Not large but not small either. The scoop I use looks like a small ice cream scoop so easy to remove.

Interesting. I checked outthe Martha Stewart recipe. It is really close to what I use.
A bit more peanut butter but I use more anyway.
Vanilla instead of nutmeg.
More baking soda as well. Since mine rises nicely I don't think you need the larger quantity.

EASY PB COOKIES
1c peanut butter
1 cup sugar
1egg
Mix together. Roll in small balls. Smash with sugar coated fork. Bake at 400 degree for 8 minute. Cool and enjoy. My son loves to make these.

I haven't been on this week but logged in to make cookies

update: the 2+ cups of peanutbutter in a double recipe qsefthuko version of the ultimate cookies was a hit! I used the Martha vanilla as well as the nutmeg-- so kinda like both I had one for breakfast every day- don't tell my DD.

I am going to experiment with the others because I would LOVE a gluten free version for a few friends-- but I thought it might be too experimental since I had no time to redo if I messed it up.

I figure if you took the time to respond, I am totally trying your recipe so thanks all!!
