Meal planning

I am looking for inspiration or tips for meal planning. When I sit to think about what I would like to eat for dinner for a week I just blank out. Breakfast and lunch are no biggie. It's just dinner that has me stumped!

Menu Plan Monday is always helpful when I am stuck. I also have a standing rule where we will eat certain foods once a week. We will have a meat free dinner night at least one night a week. My kids love breakfast for dinner, so we usually do something fancier than a typical week day morning for dinner like waffles.

I also love pinterest, but most of the time those are more complicated recipes and i never make them.

We have 8 weeks of meal plans we rotate through. It took us a while to get that many but now it is completely simplified. I leave one day a week to cover cravings or New recipes.

I started our by writing down stuff I know we liked, personal favorites of each family member. Then I made sure to have at least one super simple meal on each week. I ended up with around 4 weeks from just that. We accumulated the extra week's of plans from the weekly new meals we tried. It took a while but now our planning and shopping are a breeze!

Pinterest! I started with making basics and adding one new recipe a week. Now I have lots of newer things to add to the menu.

Maybe try:

Meatless Monday
Homemade pizzas (the French bread pizzas on Pinterest are awesome and so easy)
Chicken dish (pot pie, chicken and rice casserole etc)
Mexican night
Italian

You get the idea...

If I know it will be hard for me to cook one night I will plan on eating leftovers and make a big batch the night before
