My new favorite is pioneer woman's Alfredo. It is soooooooo good and sooooooo easy. It's basically cooked pasta added to melted butter, cream and parm cheese plus salt and pepper. Easy and amazingggg

Vegan mac and cheese is a favorite here right now
I also love Sun Dried Tomato Pesto and Home Made Pesto with or without pan seared cherry tomatoes. I'm gluten intolerant so I'm just as likely to put sauces over quinoa or millet as pasta but it's all good over pasta too. Oh and pumpkin pasta, I had to change my favorite recipe to make it dairy free but it turned out really well.

We saute a bunch of veggies (peppers, onions, spinach, and cherry tomatoes) then put them over garlic and olive oil noodles.

One of my quick faves is what we call "pasta cheech" which is also basically pasta con ceci. Sautee chickpeas with onions in olive oil, salt and pepper. Once onions soften, add garlic and some kind of green veggie (our favorites in this recipe are kale, or broccoli, or brussels sprouts) and italian seasonings/herbs. Then add this mixture plus more olive oil plus grated pecorino romano (or parmesan) to cooked pasta and mix well. Sooooo goooood.

Some of my other faves:

1 pot tuna casserole, which I make stovetop with solid white albacore, peas, havarti cheese, and NOT cream of mushroom soup.

Most recently: smoked gouda mac and cheese with blackened chicken breast and steamed veggies. and hot sauce. yum
