Boiling Beef

What is it? My parents got half a cow and split it 3 ways for Christmas. Boiling beef has me a bit baffled though, anyone know what to do with it?

ETA - I can also go pick up a heart, liver and tongue... can I do broth with them maybe? I am not particularly interested in eating them, but don't want to leave them behind either.

Boiling beef? Sounds like probably stew beef. I'd cut it in to bite size pieces, sear in bacon fat and put in crock pot (with garlic and onions) to make chili with. After a good amount of simmering, add can tomato, chili, cumin, salt and pepper, pre cooked or canned beans and simmer together.

I was thinking that might be what it is. They are big packs though, and frozen, so I haven't opened it to look at it.

Next time suggest they grind the heart and tongue with the rest of the ground beef. That's what we do when we get a side. I've never heard of boiling beef though.
