It must be Fall, because Im hungry....

I always eat more in the cooler weather

anyone have a good recipe for vegetarian barley soup....or other veggie barley recipe?

I have a barley soup recipe, but it has chicken broth and cream in it. Do you have something you could substitute? I think you can leave the cream out... I don't remember my parents having cream in it.

Barley Soup Texas Treat
3 tbsp. butter
1 med. onion, minced
1 rib celery, minced
1/2 cup medium pearl barley
1 tbsp. flour
2 cans chicken broth diluted with 2 cans water
2 cans condensed chicken broth diluted with 3 cans water
1/2 cup heavy cream or half and half

In a large saucepan melt the butter. Add onion, celery and barley, stir over medium heat until the onion is goldern and the barley opaque -- 3 or 4 minutes.
Over low heat stir in the flour, then the broth. Stir contantly and bring to a boil. Simmer, covered, until barley is tender -- 60-75 minutes. Stir in cream and reheat.

I make mine with beef, but you could substitute the beef broth for veggie... I don't measure so... I just throw this stuff in a pot, can be canned veggies, fresh, or frozen as many as you desire. This is low fat too because I add no oil or butter.


carrots sliced
green beans
corn
potatoes cubed
canned diced tomato
peas
onion cubed
broth (I like to make my own, but you don't have to)
bay leaf
garlic
salt
pepper
any other spices you desire, sometimes I like an italian spice blend
barley

Throw it all in a pot, cook all day or until veggies/barley are tender. Soooo yummy!!!
