I've been watching this thread for months, but I finally have a meal to add...



Linguini w/ Tuna & Lemon

1 box linguini (or any other pasta)
2 cans of tuna (drained)
1/4 c. olive oil
2 cloves of garlic
1 t. Italian Seasoning
2 T. Lemon Juice
1 T. Grated Parmesean Cheese

In a skillet, heat oil and garlic. Add tuna, seasoning and lemon juice. Heat through. Toss with pasta and top with grated cheese.

Does anyone have any meatless recipes? I've seen a few...but most I've seen sound yummy, but have meat. I'm trying to go vegetarian again, so I thought I'd ask.

Alot of these you can just sub with tofu. That is what I do!

I just went thru all pages and c&p 27 recipes to add to my nieces gift for graduation. She will be living in a house and going to college. Thought she would need some cheap but yummy meals to save money.

I will have to add a recipe too once I come up with one!

I've been stealing ideas from here for a long time now. I figured I'd share our regular, cheap, staple meals here

You can bake a whole chicken in just a melted stick of butter, 375 for an hour or until the meat is falling off. Eat alone or serve over rice or w/ noodles

Boil a chicken a couple hours until it's falling off the bone. Use the meat for salads, chicken salad, bbq chicken sandwiches, etc. You can also buy or make noodles to serve with it. Very versatile. I like to just add whatever we have laying around. Sometimes we'll use it to make quesadillas, too.

Tacos, soft or hard, very cheap

Cheese pizzas on English Muffins. Toast a muffin, put on cheap Hunt's spaghetti sauce and mozzerella cheese, then toss in the oven on broil until the cheese is melted.

Make some package scalloped potatoes and put chopped up ham pieces in it

If you have a ham, you can just fry up a ham steak w/ pretty much no ingredients other than the ham

We get pork steak on sale and simple cook on the Foreman grill w/ a little seasoning. Also can shred it up and use it for bbq pork sandwiches

Spaghetti w/ no meat, super duper cheap

To do quesadillas, I like to just butter on both sides and put on my electric skillet. Fill them half-way w/ whatever you want in them, fold. Cook on both sides 'till slightly brown. You can put in any leftover meat, just cheese, beans, eggs, hot dogs, etc. Many ways to clean out your kitchen w/ quesadillas

Brown a lb. of meat, melt a package of velveeta cheese, throw in a can of Ro-tell, and you have yummy nachos. You can also use this in burritos or tacos or roll into a tortilla and it's like an enchilada

Just plain pinto beans are yummy or you can mash them and put them in mexican dishes

We also often have dinners of hot dogs, grilled cheese, Jeno's pizza, or breakfast items

1 cup brown rice (rinse well)
2 cups water
1 540 mL/19 fl oz can of black beans (rinse well)
2 cups frozen (or canned) kernel corn
tsp salt
Salsa

In medium saucepan with a lid, bring rice and water to a boil, do not remove the lid and reduce heat to low. Cook for 20-25 minutes until most of the water has been absorbed. Add beans, corn and salt; stir and return to heat, stirring regularly until corn and beans are hot (5-10 minutes). Serve and top with a large spoonful of salsa.

For a more pleasing presentation, the rice, beans and corn can be prepared separately and layered in serving dish topped with salsa. Good source of protein and fiber and low in fat. And cheap!
