best muffins

This recipe is on the back of the Bob's red mill flaxseed meal bag
but I changed a few things
My boys LOVE these muffins!!!
1-1/2 c Oat flour or wheat flour (recpie calls for white flour)
3/4 c flaxseed meal
3/4 c oat bran
1 c brown sugar (I use honey instead)
2 tsp. baking soda
1 tsp. Baking powder
1/2 tsp. salt
2 tsp. Cinnamon
1-1/2 c finely shredded carrots
2 peeled and shredded apples
1 peeled and shredded zucchini
1/2 cup raisins
3/4 c milk
2 eggs
1 tsp. vanilla

mix together first 8 ingredients in a large bowl
stir in carrots,apple, zucchini, and raisins
beat milk eggs and vanilla together
pour into dry ingredients
stir until ingredients are moist
DO NOT OVER MIX. Fill muffins 3/4 full
bake in 350 oven for 15-20 min.

they are really moist !!!
the last batch I made I used brown sugar instead of honey and wheat flour instead of oat flour and they were not as moist
