pie crust
I am making pies for Thanksgiving, and I do not want to do it day of or rush the day before. Can I make pie crust and just leave it in the pie pan in the fridge for a few days, or can I freeze it in the pie pan? Will it be like buying pie crust if I don't use it fresh right away. I hate bought pie crust, it's just so icky and I wasn't sure if it was the refrigeration/freezing that made it have a funny texture or just that all bought crusts do...

I refrigerate my dough in small rounds. I think it's fine to freeze it this way, too. I've never put in the pan and cooled it for a couple days, though. It would probably be ok. I wonder if you'd have to adjust the baking time, then, if the crust was so cold?
