Regular veggies like cabbage or other salad staples at end of meal or to accompany the meal are one of our favorites. We've had Asian style shredded cuke/carrot/peanut/sesame sauce and kimchi. Love these for both flavor and health benefits.

We do a lot of fermented lentils (Idli). I follow these blogs:

"nandyala.org" (This one is not active, but still has a great collection of recipes)
"101cookbooks"
One game changer for us was discovery of Aquafaba! It is a bran liquid that can be used in most recipes in place of egg whites (or even eggs) (Think Macarons, meringues etc).

Lots of great ideas here. My family is vegan and I would say my favorite dishes come from Mexican and Asian cuisines. My latest favorite 40 minute recipe if from Vegan Richas' blog:
Sticky Ginger Sesame Tofu and Veggies
Noodles:

6 to 8 oz brown rice vermicelli or maifun or rice noodles
1 tsp lime or lemon juice
tsp toasted sesame oil
tsp red pepper flakes (optional)

Sticky Sesame Tofu:

1 tsp oil
12 to 14 oz firm tofu
2 tsp sesame oil
large red bell pepper thinly sliced
or 1 large green bell pepper thinly sliced
1 hot chile , green (Serrano) or red(birds eye)
cup sliced carrots
to 1 cup other veggies of choice
5 cloves of garlic, finely chopped
1 tbsp minced ginger, peel ginger and mince
⅓ cup soy sauce or tamari
to ⅓ cup maple syrup
2 to 3 tbsp rice vinegar
2 to 3 tsp sriracha
1 tbsp orange juice (optional)
a generous dash of black pepper
tsp salt
1 tbsp cornstarch (or use arrowroot starch)
cup water
cilantro for garnish, 1 tbsp toasted sesame seeds for garnish, epper flakes as needed
