Pressure canner
I have a quick question. If I buy a pressure canner, will I be able to safely can my homemade broth and stock? Right now I freeze it, but after we move we wont have our deep freeze anymore due to lack of space. I can't remember what the items are that they don't recommend canning even with pressure canning (dairy? Meat?). I know is not safe with water bath.

Yes you will be able can meat, broth, soup, veggies. You can't can dairy though. If you pick up Ball book of preserving they've got lots of broth and stock recipes in there

YOu can pressure can just about anything. I don't know about dairy, but soups and stews containing meat and fish are ok if pressure canned. You should be able to can your own broth.
I just got a 23 qt for x-mas and LOVE it! I canned a ton of blackbeans with it and will soon do the same with kidney beans. It keeps me busy (and my house warmer) until next fall when my garden will come in. oh, and I plan on canning my own soups and stews with it too once the garden comes in!

Yep, should be fine, just make sure you follow the directions with your canner to the letter and you'll be eating pritty when your freezer goes away!

Sorry to hijack, but I was wondering if I can pressure can my OWN recipes or if I must follow an actual canning recipe like from a Ball cookbook??

I can my own recipes, recipes I find online (best bb jam in the state I guess, people hound me for it), and ones handed down from grand parents and elderly neighbors.

your own broth!I can my own recipes, I just look for similar recipes to figure out the appropriate pressure and processing time!
