Sauerkraut from scratch

I had so much fun making a sourdough starter a few months ago that I thought I'd give sauerkraut a try. Someone had mentioned it on Facebook and said that when it's ripe, it tastes kinda like pickles, and I like pickles.

My bowl was slightly too small for good mixing of the cabbage bits with the salt, so I kept spilling some trimmings, which I of course then had to eat. They tasted good, so then I got even more careless with my mixing so more would spill, lol. If I like it so well "fresh," I hope I like it just as much when it's "ripe."
