I just made pot roast the other day with some very simple ingredients.

A cut of beef
french onion soup mix
cream of mushroom soup
water
celery
potatoes
onions
Montreal steak seasoning

Rinse the beef and season with steak seasoning
Mix half packet of onion soup mix with half can of mushroom soup
Pour over beef in crock pot and add celery and potatoes
Pour rest of cream of mushroom soup over meat and veggies and add 1c water
Cook on low for 8 hours (might be less, depending on size of beef)

This tasted so yummy with mashed potatoes!!!

I'm back to add some of my favorites:

Creamy Chicken & Potatoes
2 cups baby carrots
1lb red potatoes, quartered
1 small onion, coarsely chopped
1 clove garlic, crushed
1 cut up chicken (skin removed except on wings) 3.5-4lbs
1 cup chicken broth
3 tbsp cornstarch
1/2 tsp dried thyme
1 tsp salt
1/4 tsp pepper
10oz frozen peas (thawed)
1/2 cup heavy cream

Combine carrots, potatoes, onion, and garlic in crockpot. Place chicken on top. In a separate bowl, combine broth, cornstarch, thyme, salt, and pepper; pour in crockpot. Cover and cook on low ~8hours or high ~6 hours. Remove chicken and veggies at the end-stir in peas and cream. Heath through, then spoon sauce over chicken and veggies.


Slow Cooked Beef Minestrone
1.5lbs or so of boneless beef chuck roast, cut into 1in cubes
2tbsp olive oil
pan searing flour
1 lb of chopped veggies (usually potatoes, zucchini, onion-whatever you want to add)
32 oz beef culinary stock
14.5oz can italian style diced tomatoes
1/2 cup ditalini soup pasta
24oz seasoned tomato sauce
15.5oz can garbanzo beans (drained & rinsed)
6oz baby spinach

Dust beef with flour. Heat oil in pan and brown beef until all sides are paper bag brown. Transfer beef to slow cooker. Add veggies to pan drippings-season with salt and pepper. Cook about 3 minutes, then add to slow cooker. Add stock, tomatoes, and sauce. Cook 4.5-6 hours on high or 8-10 hours on low. Add dry pasta and beans about 30-45 minutes before end of cooking. Add spinach and stir; allow to wilt for about 2 minutes. Serve with warm bread!

Chicken Tortilla Soup
2 Tbsp butter
1 clove garlic (I crush with press)
2 cups chicken
29oz chicken broth
2 quarts tomatoes (I like to use some diced, some crushed)
1c salsa
1/2 cup fresh cilantro (I use a lesser amount of the dried stuff)
1Tbsp cumin

(I also usually add a can or 2 of beans, some zucchini chunks, frozen corn-whatever I feel like throwing in).In slow cooker, saute butter and garlic on high. Turn to low, add chicken, broth, tomatoes, salsa, cilantro, cumin. Cook on low 8-10 hours. Top with cheddar cheese, sour cream, tortilla chips, or whatever else you'd like.

We love this super easy recipe! it looks kind of gross when it's cooking, but tastes fantastic!

Creamy Crockpot Chicken
4 Chicken Breasts
2 cans Cream of Chicken Soup

Place chicken breasts in crockpot, cover with soup and cook until chicken falls apart. (Maybe 6 hours?)

One of the most made meals I've made in the crock pot is
Broccoli Chicken

3-4 chicken breasts
1-2 small cans of cream of broccoli (I use fat free)
Fresh broccoli

Place the chicken breasts in the crock pot, pour the cream of broccoli on top, if too thick, thin it w/some milk and cook on high for 4 hrs. After that add the broccoli florets on top of everything for another 15-20 mins (depending on how hard/soft you like your broccoli) and it's done.

Serve over rice, super yummy and quick.

"Lazy mom's beef stew" - HAHA! I was just telling DH that I wanted to make beef stew in my crock pot. Like a pp said, I've had my crock pot forever, but only just started using it, and am so happy to see some good recipes here. This beef stew one will def make a dinner table appearance soon! Thanks for sharing!

I do a variation of this, but it's cheesy chicken. I mix one can of cream of chicken soup and two cans of cheddar cheese soup. I also season the chicken with garlic powder and pepper. Serve over celletini (sp?) pasta with some mixed veggies. SO GOOD.
