Breakfast: Help, we're in a rut!
We are NOT morning people here and have gotten our ourselves into a breakfast rut. Basically, we have cereal, Pop Tarts, french toast sticks once in a while, and that is about it. School is coming soon and I want to start the days a little better but I don't have time in the morning for much prep. Oh, and everything has to be non-dairy so yogurt is out of the question. Anyone have ideas for quick nutritious breakfasts?

We love Baked Oatmeal. You can make it ahead and just cut a piece and pour milk over it (cold or heated up). Yum and good for you!

I really love making sweet potato pancakes for my little ones. I generally make them from scratch since I stay home and my kids are too young for school, but it's very adaptable so you could find a way to make them fast. Maybe find a pancake mix that does not require milk....I think there are some that you just add water. Buy canned sweet potaotes, drain the liquid, smush them up, add some vanilla and cinnamon and then add to the pancake mix. You could probably make the mix the night before and cover and refrigerate and just throw the batter into a pan in the morning. A little butter, or non dairy butter like spread
and some syrup and you're littles will have bellies full of hot breakfast! I pretty much love pancakes and put nearly anything into them! Banana, blueberries, peaches, I even added raspberries one time.

We love breakfast here.
Off the top of my head --slice of homemade bread toasted with jam and fruit oatmeal scrambled eggs and grits frozen waffles (on occasion) and fruit homemade pancakes with fruit cinnamon rolls (also on occasion only) yogurt with granola and berries You can always bake up a nice batch of healthy muffins to freeze. On busy mornings, take them out of the freezer, zap em in the microwave for a few seconds (or let them thaw out while you are getting ready), serve with fruit and breakfast is done. french toast You could always bake a batch of healthy, yummy muffins

We do bagels with cream cheese or jam, english muffins with PB or nutella, scrambled eggs, fruit (strawberries, cantaloupe, bananas, blueberries, etc....with just about EVERY breakfast), cereal, hard boiled eggs, grits, oatmeal, yogurt, waffles, pancakes.

If you are so inclined, you could make a few things up over the weekend and throw them in the freezer and just pull what you need out and reheat it in a couple minutes. Things I've frozen: muffins, pancakes, waffles, egg burritos, ham egg and cheese English muffin sandwiches, bagels, granola bars, fruit that is getting too ripe (then take frozen fruit, milk alternative and maybe some honey or agave and blend a quick smoothie), french toast slices... that's all I can think of.
