Diaper Swappers

We had fajitas last night (chicken and beef). I have some cooked leftovers with peppers and onions, and I have some fajiat meat (both chicken and beef) that has not been cooked that needs to get used...

Suggestions on what to do with it, other than having fajitas again?

I was thinking maybe quesadillas? But want some other suggestions in case DH doesn't want quesadillas.

cook them into eggs with some salsa and corn and serve with cheese and avocado

That's interesting. I wouldn't have thought of mixing them with eggs....

Hey, a chicken fajita or steak fajita omelette.... with some mushrooms and additional peppers and tomatoes with jack cheese...

Soup? Add in some chicken broth and some spices, then make it like a tortilla soup... just crush some tortilla chips on top when it is done and add a little bit of cheese and some avocado and deliciousness!
