I acquired 4 dozen eggs that are going to need used soon. (Got them because they are due to expire within a few days)
DH and I are the only ones who eat eggs, and were tired of fried eggs/egg sandwhiches. Any recipes that use a lot of eggs?

I think if you beat them, you can freeze them. Maybe in 1 cup amounts. Then you could use them for egg sandwiches, scrambled eggs, or in recipes.

Hard boiled eggs for salads, sandwiches , or by themselves. Quiche, fritattas, cookies

How about deviled eggs for a labor day get together?

Deviled eggs. If I make them for a party I have to make extra for us to eat first. They fly around here.

Fritattas are always good for breakfast, lunch or dinner. Bread pudding uses a lot or quiches are good, you can make them and then I'm sure freeze them for later.
