LOVE this thread. I'm not a vegetarian, but gave up meat for lent. I eat very little red meat and after watching food inc. I have a hard time buying meat of any kind from the grocery store.
Here are a few of my favorites Chickpea Sandwich filling 1 (19 ounce) can garbanzo beans, drained and rinsed 1 stalk celery, chopped 1/2 onion, chopped 1 tablespoon mayonnaise 1 tablespoon lemon juice 1 teaspoon dried dill weed salt and pepper to taste you can also add carrots, peppers or other raw veggies. I like to use whatever is in the fridge that needs to get used up. mash chickpeas with a fork or put in food processor, chop veggies and mix all ingredients together an a bowl. Serve on tortillas, toast, with chips, the possibilites are endless. This tastes even better the second day. http://allrecipes.com/Recipe/Mexican...ad/Detail.aspx I use this basic recipe but take the cucumbers out and add black beans and yellow peppers. Sometimes I add cous cous too, It's delicious. Slop (this is what we call it at our house, there are many variations based on what we have on hand.) firm tofu cubed and cooked in the skillet with a pack of taco seasoning 1 package spanish rice- cooked in a large pot put some or all of the following- black beans, chopped peppers,onions, tomatoes,minced garlic and/or corn. Add the tofu and rice and cook until hot. Serve on flour tortillas or hard shell tacos. We top with shredded cheese, sour cream, salsa, cubed avocado..again whatever is on hand. The leftovers are just eaten from a bowl or scooped up with tortilla chips. This is my favorite easy dinner because you just throw everything in 1 pot.

Tonight it was whole wheat pasta with lemon, artichoke & spinach sauce with goat cheese on top.

Portobella mushroom caps (as many as you need for your family) washed and prepared.
Rub small amount of olive oil over mushroom caps Season with garlic, oregano, onion, parsley and black pepper to taste meanwhile cover a small baking dish with a thin layer of sauce place mushroom caps in sauce Add 1/4 cup cottage cheese (or ricotta cheese) into middle of mushroom (great without cheese too if you don't eat it) top with prepared pasta sauce of your choice. sprinkle with parmesean and a touch more garlic bake at 350 until bubbly, about 20-25 minutes in my oven. ***** These mushroom caps also make a great burger replacement. Just grill as you would a normal burger and place in lettuce wrap or on bun, top with your favorites and enjoy |

I cooked this pasta with leeks and peas and it was a big hit. This is what I did.
4 leeks cut up thinly in half moons pack of frozen peas some chopped fresh tarragon bag of pasta 3/4 cup heavy cream 2-3 tbsp olive oil Cook the pasta as directed. Throw in the frozen peas in the last two minutes. Meanwhile saute the leeks in the olive oil until soft. Probably 6-8 minutes. Add the cream and simmer for a minute or two until it is thickened. Add the pasta and peas and mix together. Fold in the tarragon. Delicous!

I have only been a vegetarian for six months and am still struggling to find new things to cook. I plan on cooking a lot of new things this month and if I find recipes I really like I will post them on here. One website that I found is http://danatreat.com/. She used to be a personal chef and has two young boys. There are a lot of things on there I want to try. I also liked some stuff on plantfoodfabulous. So, thanks to the mama who posted that and whose blog that is!

I made these Black Bean veggie burgers the other day and thought they turned out surprisingly well. I used 2c of black beans instead of a can (I cook up batches of dried beans and keep them in the freezer in 2c portions) and 2 eggs instead of one (based on reviewers who said it helped them stick together). They were maybe a touch bland, probably because I used more beans than the recipe calls for. I'll probably add a little more of the sauce, and perhaps some salt next time.
