I love this soup....
Lentil Minestrone Soup from crockpot365 blog 2 cups lentils, rinsed 1/2 cup diced celery 1/2 cup diced carrot 1 onion, peeled and diced 4 cloves garlic, minced 1 (28-ounce) can diced tomatoes (with juice!) 1 tablespoon Italian seasoning 2 teaspoons paprika 1/2 teaspoon kosher salt 1/2 teaspoon black pepper 2 cups hearty torn greens, like kale or chard (if you'd prefer spinach, stir in before serving) 4 cups vegetable or chicken broth (optional: add another 1 to 2 cups of broth if you'd like before serving) The Directions.... Use a 6-quart slow cooker. Put the rinsed lentils into the bottom of an empty insert. Add the diced celery, carrot, onion, and garlic (if you have a food processor, it might be helpful to use). Add the entire can of diced tomatoes, and add the seasonings and torn greens. Stir in the broth (I used chicken, but any broth will work just fine). Cover, and cook on low for 8 to 10 hours, or until the lentils are soft. If you'd like to stretch this to feed more, or for a thinner soup, feel free to add more broth. Serve with grated Parmesan cheese, if desired, and a hunk of garlic bread. Other veggie takes on traditional favorites around here....no recipes because eyre just thrown together usually... Enchiladas stuffed with peppers, black beans, olives, and green chilis topped with tomatillo sauce Penne and pesto sauce with pine nuts Penne and homemade marinara sauce with French bread Cheesy potato soup Broccoli cheese soup (pioneer woman's is my fave!!) Veggie chili made with chili beans, carrot, tomato, chilies, zucchini, corn and black beans

This Beans and Rice recipe is quick and one of our favorites. It is so good warmed up as leftovers as well. Gotta have the cheese in my opinion, it almost makes it an Italian dish.
![]() 1 T. oil 1 (red) onion 3 cloves garlic 1 15oz can black beans, undrained 1 14.5oz can diced tomatoes, undrained 1t. dried oregano 2 cups cooked brown rice mozzarella cheese (optional) In large saucepan, heat oil over med. high. Add onion, cook and stir until tender. Add garlic, beans, tomatoes and oregano. Bring to a boil; stir in rice. Cover; reduce heat and simmer 5 min. Serve with cheese. |

Ohhh I'd love some more ideas posted here as well!
I actually tried that honey lentil recipe a month or two ago, left out the soy sauce, and added the honey near the end instead of cooking it, and everyone here liked it. ![]() Just discovered that my 4 yr old and I really like bok choy cut up and sauteed with ginger & garlic. It's not exactly a whole meal if by itself, but it can be a nice substitute for lettuce in a big salad w/ whatever ingredients you want to add. I also recently did baked plantains & sweet potatoes blended together... Yum! For lunch today, we had carrot & ginger soup. I just boiled about 10 carrots or so in broth until the carrots were tender, added ginger and cinnamon, and blended it to a smooth consistency. My 4 yr old and "picky" 3 yr old were licking their bowls. Just found out I really like using coconut milk for things that need a creamier texture, too.

I think I've found my new favorite meal! I made these yesterday, with a few mods. I used the filling to make burritos with ww flour tortillas instead of enchiladas. And instead of making the chili sauce (because I'm lazy) I just topped with some canned green chilis and sour cream. pure goodness, it's a must try! made this Sunday and it was amazing, I used oyster mushrooms instead of ****ake. It is super simple but that is a ton of cabbage to try to fit in a pot or slow cooker. I use mung bean lentils in it and can do it with or without the couscous. I triple the recipe and then make a veggie to go with it and that is what we have for dinner. The kids will eat it for breakfast with a little coconut milk. I make everyone eat what I am making cause I'm just mean that way but I will sometimes make a meat and then just eat the veggies and starch like potato or rice while they have everything. You can also do something like the flautas or burritos and just stuff yours with veg while everyone else gets meat in theirs. I've noticed dh gets over not having meat if I make a really go veg chili or soup.
